Number of Servings: 5

Ingredients

    5 - large red bell peppers
    1.5c - brown rice (uncooked)
    1c - tomato sauce (any type - I used what I had: Ragu)
    1lb (20oz) - Jennie-O Ground Turkey 93/3
    1c - Shredded cheddar cheese
    1c - yellow onion, chopped
    Spices to taste
    *I used about 2 tsp of Penzey's 'Arizona' spice mix and 1 tbsp of Red Hot Sauce

Directions

Pre-heat oven to 350*F
Cook brown rice as instructions indicate (2:1 water to rice)
Clean red peppers, removing core and stem. Slice vertically or leave an opening at the top. Place onto a baking pan and put in the oven for 15 minutes.
In a skillet, brown turkey and cook onions with spices. Remove from heat.
Mix turkey/onions, cheese, rice, and tomato sauce in a bowl.
Remove peppers from oven and fill with turkey mixture. Place stuffed peppers back in the oven for 20 minutes.

Serving Size: Makes 5 servings (5 very full stuffed peppers)
