Ingredients

    For Broth (cut veg small or put in food processor):
    1/2 Onion
    1 inch piece of Ginger
    3 cloves Garlic
    1 stalk celery
    1 tsp coriander powder
    1 tsp cumin
    2 tsp basil
    1 tsp oregano
    1 tsp thyme
    1 tsp oregano
    1 tsp marjoram

    Soup:
    1 cup lentils
    1 stalk celery
    3-4 fresh tomatoes or 1 can tomatoes
    2 bay leaves

    1 tbsp greek yogurt for topping

Tips

Make the broth with the seasonings, onion, garlic and ginger and 1 cup of water or use chicken or veg stock


Directions

Put everything together in a pot and bring to a boil. Turn the heat down and simmer for 20 minutes.
