Introduction

This is a super easy way to use some leftover chicken in a nutritious and yummy all in one meal! This is a super easy way to use some leftover chicken in a nutritious and yummy all in one meal!

Ingredients

    1ea 3 oz grilled boneless skinless chicken breast (previously cooked)
    1 cup fresh asparagus
    1/3 cup dry whole wheat pearl couscous
    1 1/2 cup low sodium chicken broth
    1 tsp garlic powder (adjust to taste)
    1 dash fresh ground black pepper

Tips

If the asparagus and couscous do not soak up all of the chicken broth, you can serve this in a bowl, or drain remaining broth and serve on a plate.


Directions

Cut the chicken breast into bite sized cubes. Remove the coarse end 1/3 of the asparagus and cut remainder into 1" pieces. In a 10" saute pan add all ingredients and put on high heat, bring to a boil. Stir once, reduce heat to low and cover. Simmer on low for 12 minutes. Fluff with a spoon or fork and serve.

Serving Size: Makes 1 serving as a full balanced meal
