Ingredients

    1 cup Moong beans whole -cook these in 2.5 cups of water and save 1 cup of the water
    1 med onion - chopped fine
    1" piece of ginger - grated
    3 gloves of garlic - minced
    1 med tomato - chopped
    1 tsp cumin seeds
    1 green chile - chopped -- optional
    1 tsp cayenne --optional to taste
    1 pinch turmeric
    .5 tsp cumin powder
    1tsp coriander powder -- or you don't have these you may use 1tsp curry powder
    cilantro for garnish
    tempering
    2 tsp oil

Tips

I use brown Indian rice. This also freezes well.
if time is short and you have a pressure cooker use it for the beans- I just use the stove top.


Directions

heat oil and add cumin, green chile. After seeds pop add onions, ginger and garlic. Saute till onions turn translucent. Add the tomatoes and saute for a minute or two. Now add the spices and fry briefly. Add beans.
You may need to add a cup of water simmer gently for 10 - 15 min Garnish and serve with rice or flat bread.
