Introduction

Ingredients

    1 3/4 cup dried lentils, rinsed
    1 whole bay leaf
    1/4 tsp pepper
    1 tsp salt
    1/8 tsp each marjoram, sage, thyme
    2 large onions, chopped
    2 cups canned tomatoes or 15 oz can of tomato sauce
    2 cups water
    2 cloves garlic, minced.
    3-4 large carrots, sliced
    1 cup thinly sliced celery
    1 green pepper, chopped
    2 tbsp finely chopped parsley
    1 1/2 cup low fat cheddar cheese

Directions

Preheat oven to 375 degrees Fahrenheit. Combine ingredients in a 9x13 inch baking pan. Rinse lentils and mix with seasonings (except fresh parsley), onions, canned tomatoes, water and garlic. Cover tightly and bake for 30 minutes.

Uncover and stir in carrots and celery. Bake covered 40 more minutes. Then stir in green pepper and fresh parsley. Sprinkle cheese on top and bake for 5 more minutes.

    I think the calorie count is wrong on this recipe. Spark gives the calories for cooked lentils....the calories for 1 cup of raw lentils is 678 (not 224).

    I've made this for years. It's from the More With Less cookbook. My family loves it, but I only use 1 onion and usually increase the herbs. We especially love it with crusty bread. - 3/11/09
