Ingredients

    1 cup uncooked quinoa
    1 cup chopped green bell pepper
    1 cup chopped onion
    1 cup chopped zucchini
    2 white mushrooms, chopped
    3 tbsp extra virgin olive oil

Tips

Add as many veggies as you want.
This is my first experiment with quinoa and I'd appreciate any suggestions for improvement.


Directions

Cook the quinoa according to the instructions on the package.

While the qinoa is cooking, chop the veggies and sautee them in the olive oil.

When the quinoa is cooked, fluff and then stir in the veggies.

Serving Size: makes 4 1-cup servings
