    bone in pork shoulder (about 10 pounds)
    pepper, salt, garlic podwer


1. cut off excess fat from pork

2.lay in baking pan on rack fat side up and rub on spices.

3. put foil on top...fill bottom of pan with water

4. oven at 325...cook at least 1/2 hour per pound (5 hours) or until internal temp reaches 170F
