Introduction

This spicy meal will make you forget about your favorite mexican place and all the calories that come with it. This spicy meal will make you forget about your favorite mexican place and all the calories that come with it.

Ingredients

    8 oz. Boneless, Skinless Chicken Breast
    1 large each Red, Yellow, Green Bell Peppers
    1 medium onion
    2 cups cooked brown rice
    1/4 cup canned corn, drained
    1/2 canned black beans, drained
    2 tbsp. taco seasoning
    1/4 cup water
    Chili powder
    Salt
    Pepper
    8 Kabob Skewers
    Salsa (optional)

Directions

Prepare grill. (Indoor grills can also be used.)
Cut chicken into approximately one-inch cubes. Season chicken cubes with salt, pepper, and chili powder to taste. Slice peppers and onions into square portions.
Thread skewers with alternating chicken, pepper, and onions pieces. Grill skewers, rotating occasionally, until juices in chicken run clear.
Meanwhile, in medium pot mix rice, corn, and beans.
Mix taco seasoning and water in small bowl until most of the lumps are gone. Pour mixture into the rice pot and mix well. Cook the rice mixture at medium heat on stove until heated throughout, stirring occasionally.
Spoon rice mixture onto plates, then kabobs, then top with salsa.
Serving is 1/4 of rice mixture and 2 kabob skewers.
