Number of Servings: 8


    1 # lean ground beef, browned, drained
    1 onion, chopped
    3 T canola oil
    26 oz. pkg of southern style shredded hashbrowns
    2 cans of Rotel tomatoes with green chilies
    1 can chili beans, undrained
    1/2 tsp each of season salt, garlic powder and cumin
    1.5 cups shredded 2% cheddar cheese

    Reduced Fat sour cream and baked Tostitos


In an ovenproof skillet (I used a LARGE iron skillet), cook ground beef and onion, drain and et aside. Heat oil in skillet and cook hashbrowns according to package directions. Combine beef and remaining ingredients. Pour over hashbrowns. Sprinkle with cheese. Bake at 400 degrees for 30 minutes. Top with sour cream and serve with baked Tostitos on side.
