My version of egg 'muffins' My version of egg 'muffins'
Number of Servings: 6

Ingredients

    3 cups egg substitute (I use ReddiEgg)
    1 1/4 cups sauteed green bell pepper and onions, seasoned to your liking (I sauteed with cooking spray)
    1 cup ham, diced small (I used Wilson brand dinner ham with 2 grams of fat)
    1/2 cup fat free shredded cheddar cheese (I used Kraft)
    cooking spray


Directions

Divide peppers & onions, ham between 12 muffin cups sprayed with cooking spray. Put 1/4 cup egg substitute in each muffin cup. Then top with cheese. Bake at 325 for 20 - 25 minutes or until a knife comes out clean.

Makes 6 servings, 2 muffins each
