Introduction

Ingredients

1 Tbsp. extra virgin olive oil
3 cloves garlic
1 small onion, chopped
1 bell pepper, chopped
10 slices jalapeno peppers, chopped
16 oz. boneless, skinless chicken breasts, chopped and cooked
1 Tbsp. cumin
1 quart (32 oz) chicken broth, 99% fat free
1 14.5 oz. can pinto beans, drained
1 14.5 oz. can petite diced tomatoes
4 c. fresh spinach, chopped
2 avocados, chopped
1/4 c. cilantro, chopped
2 limes, juiced
2 c. cooked white rice
Directions
Cook the rice according to directions.
While the rice is cooking, heat olive oil in a soup pan over a medium flame. Add garlic, onion, bell pepper and jalapenos and cook for 5 minutes, or until the veggies are soft.
Add chicken and cumin and cook another 5 minutes.
Add chicken broth, pinto beans, spinach and tomatoes. Increase heat to medium-high, cover and simmer for 10 minutes.
Add in lime juice and stir well.
To serve place 1/2 c. rice in a bowl, pour 1 c. of soup over it and garnish with 1/4 of an avocado and cilantro to taste.
