Introduction

I have never served this to anyone that didn't ask for the recipe after. This is a light soup that doesn't taste light. It is very filling, very little fat and FULL of fiber. Ingredients

    Green Tortilla Soup

    1 qt of chicken broth
    6-8 tomatillos with husks removed and rinsed well
    2 bunches of cilantro with ends cut off
    1 jalapeño with seeds removed
    1 whole med-large yellow onion
    ½ head garlic
    Juice of lime
    2 4oz cans of diced green chilies
    1 lb of cooked chicken shredded, diced, or cut
    1 can corn
    2 15oz cans of black beans
    1 green bell pepper diced
    1 TBS ground cumin (or more if you)
    1 tsp salt
    1 tsp ground pepper
    Ground red pepper to desired heat


Directions

Makes approximately 10 1.5 cups.

Warm up stock on stove in med-large pot. Rinse all veggies. Put tomatillos, cilantro, and jalapeño in blender. Blend well. Add 1 of the cans of diced chilies. Add garlic and onion to blender mix. Blend well for a few minutes. Add Lime Juice and make sure it is well blended. Add to chicken stock in pot. Bring to boil. Add diced green pepper, other can of diced chilies, corn, beans, and chicken. Add seasonings (cumin, salt, and peppers). Let simmer stirring occasionally for 30 minutes.

I top it with baked tortilla chips, low fat cheese, and low fat sour cream. Avocado's are also SO yummy with this.

    I really enjoyed this soup. It was a little spicy but fullfilling. Because of the spiciness, I was able to keep portion size in control. I would rate this with 5 stars. - 1/26/09
