Ingredients

4 oz Barilla Plus Rotini
2 Tbsp olive oil
.5 medium onion, diced
4 cloves garlic, minced
2 plum tomatoes, chopped
1 cup mushrooms, chopped
1 medium red bell pepper, diced
4 oz baby spinach
.3 cups sweet corn
1 Tbsp oregano (dried)
1 Tbsp basil (dried)
1 Tbsp garlic powder
1 Tbsp onion powder
1 tsp sea salt
1 tsp black pepper
2 oz semisoft goat cheese
Tips
Stirring the goat cheese into the dish makes for a smooth, creamy "sauce."
Or, omit the goat cheese for a vegan option.
Directions
Cook pasta, drain, and set aside.
In a medium-large pot, heat olive oil over medium. Add onions and saute until translucent, about 5 minutes. Add garlic, tomatoes, mushrooms, red pepper, spinach, and corn. Add herbs and spices, and stir well.
Cook until spinach is withered and tomatoes are partially broken down, stirring occasionally.
Add pasta to the pan and stir it into the veggie mixture.
Spoon into serving bowls, crumble goat cheese over the tops, and serve immediately.
Serving Size: makes approximately 4 1-cup servings
