Ingredients

1 1/2 cups sugar
1 1/2 cups all purpose or cake flour
1 cup cocoa powder
1/8th tsp salt
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/2 cup unsweetened applesauce
1/2 cup soft tofu
1/2 cup pureed avocado
3/4 cup almond milk unsweetened vanilla
1 tsp vanilla
Tips
use dark cocoa powder for a richer flavor. Can also add diced beets (amazingly they have a texture like chocolate chips)
Directions
Pre heat oven to 350. Coat jelly pan with cooking spray or wipe with canola oil. Combine sugar, flour, cocoa powder, baking powder, baking soda, and salt.
Combine applesauce, tofu, almond milk,avocado and vanilla in a food processor or blender until smooth in texture.( you can add the beets dices at the end of the blending process for a few seconds to mix)
Add tofu mixture to dry ingredients and mix well. Transfer batter to pan and bake until batter is set and top is dry (45-50) minutes.
Cool in pan then cut into 24 pieces
Serving Size: 1/24 of a jelly pan
