Ingredients

1/2 cup unsalted butter
3/4 cup sugar
2 large eggs
1 tsp milk
2+1/2 cup all-purpose flour
1/2 tsp salt
1 tsp baking soda
3 bananas, peeled and mashed
1/2 cup dried cranberries
1/2 cup walnuts, roughly chopped
Tips
The loaf will keep for up to 1 week in an airtight tin, or freeze for 3 months.
Directions
1. Preheat oven to 325*F. Grease bread pan.
2. Beat the butter and sugar together in a large bowl until pale and creamy. Add beaten eggs and milk, and mix well.
3. Stir in the flour, slat, baking soda, followed by the bananas, cranberries, and walnuts.
4.Pour batter into bread pan. Bake in the center of the oven for 50 mins. The loaf is cooked when a skewer inserted in the center comes out clean. Remove from the oven and leave to cool in the pan for 10 mins, then transfer to a wire rack to cool completely.
