Ingredients

    500g strong wholemeal bread flour
    10 g crushed seasalt flakes
    2 x 7g sachets fast action dried yeast
    2 tablespoons olive oil, plus some extra for drizzling

Tips

1) use cool water for mixing
2) this is a messy, wet dough to work with! Add water gradually!
3) use a large bowl to allow for rising
4) serve hot ffrom oven or keep for one day. Once cooled wrap in clingfilm to keep for up to 24c hours, or freeze
5) before serving, thaw if necessary, sprinkle with olive oil and reheat at 220 degrees C/425F/gas mark 7 for 5 mins


Directions

1) put flour and salt flakes in bowl and stir in yeast. make a well in the middle, add olive oil and 300 ml cool water.
2) Mix flour into liquid with a wooden spoon or hand to form a rough dough. massage dough in bowl for 5 minutes, slowly mixing in about another 100ml cool water. It will seem quite wet!
3) work the dough for approx 5 minutes, stretch dough by pulling on one side with fingers and palms of hands.
4) fold the stretched dough into the centre. turn the bowl 80 degrees and repeat stretching and folding process.
5) tip dough onto a well oiled surface. knead for 5 more minutes.
6) oil the bowl, return the dough, cover with cling film and let it rise at room temperature for about an hour and half. it will increase about 4 times in size.
5) tip dough onto lightly floured work top, keeping in as much air as possible. divide dough in half and split between the two baking trays. push out corners of dough into corners of tray. Leave, uncovered at room temperature for a further hour. It should double in size.
6) preheat oven to 220'C/425'F/gas mark 7, drizzle bread with oil and sprinkle with salt.
7) Bake for 20-25mins, until underside is lightly browned.
