Ingredients

    chicken breast
    7 tbs butter
    7 tbs flour
    2 c chopped celery
    1.5 c chopped onion
    1 c shredded carrot
    3 cloves garlic
    2.5 c chicken broth'
    15 oz can diced tomatoes w/chilis
    2 cans white kidney beans drained
    1 c hot wing sauce
    1 can chopped green chilis (4 0z)
    2 bay leaves
    .5 tsp cumin
    1.5 tsp 1oregano

Directions

melt butter in large heavy sauce pan. add celery, onions, carrots and garlic. saute until veggies are slightly tender, about 5-7 minutes. stir in flour and cook another 2-3 minutes. add chicken broth and tomatoes. stir over medium heat until it comes to a simmer and thickens. reduce heat to low. stir in wing sauce, green chilies, bay leaves, cumin, oregano, beans and chicken. cook on low heat, stiring frequently, for 30 minutes.
