Ingredients

1 ripe mango
2 cups diced, cooked sweet potatoes
1 lb boneless skinless chicken (or 1 bag Quorn Tenders for a vegetarian option)
3/8 cup tamari
3/4 cup water
1 clove garlic, diced
3 tbsp sweet, mild hot sauce (Ruth's Mango works well)
3 tbsp honey
1/4 tsp crushed red pepper (more or less to taste)
1 tsp cornstarch
Directions
Makes 2 large servings (about 1 1/2 cups each)
1. Heat olive oil over medium heat. Add garlic and cook about 3 minutes.
2. Add tamari, water, honey, and hot sauce. Allow to simmer about 5 minutes.
3. Add sweet potato, mango, and crushed red pepper. Continue to cook over low-medium heat.
4. In a separate pan, cook chicken in bite-sized chunks until juices run clear and inside is no longer pink.
5. Add chicken to sauce mix.
6. Sprinkle cornstarch over sauce, stir well. Cook an additional 5 minutes to thicken. Serve over rice or noodles.
