Introduction

These tasty muffins are very low calorie, high fiber and ultra low fat. I came up with this recipe about 3 or 4 years ago when I found myself with about 10 lbs of over-ripe bananas. This version is tweaked to be more favourable to reduced calorie (but not sugars) diets. The Craisins add a nice tartness to complement the sweetness of the loaf. Ingredients

    3 cups pureed, over-ripe bananas, approx 6 whole
    1/4 cup honey
    2 egg whites
    1 tsp vanilla

    3 cups All-Bran, ground (makes 1.5 cup),
    cup whole wheat flour
    cup wheat bran
    1 tsp baking soda
    1 tsp baking powder

    cup Craisins,

Tips

*add 1/4 cup miniature chocolate chips for a nice punch to the flavour!
*try using applesauce, pumpkin or other pureed fruits and/or veggies in place of the bananas!
*remember that any substitutions in this or any recipe will change the nutrition stats!


Directions

Preheat oven to 350F

In large bowl mix together wet ingredients.
In a separate bowl mix dry ingredients thoroughly then add to wet ingredients.
Mix with as few strokes as possible. Just before all flour mixture is wet, stir in craisins.
Divide Evenly over 2 loaf pans (bake about 32-35mins) or 24 muffin tins. (bake about 15-20 minutes)
