Ingredients

2/3 cup peanut butter
1 teaspoon sugar
3 tablespoon soy sauce
1 cup hot water
3 tablespoon lemon juice
2 cup thinly sliced red peppers
1 clove minced garlic
1 cup fresh mushrooms
1 cup sliced onions
1 teaspoon red pepper flakes
4 chicken breasts chopped into bite size pcs
10oz whole wheat fettuccine
Directions
1) Cook pasta according to directions. Drain noodles, rinse and set aside
2) Begin cooking chicken chunks in skillet with a little oil
3) While chicken is cooking, in a blender mix peanut butter, soy sauce, lemon juice, garlic, red pepper flakes, sugar, and hot water until smooth
4) Add vegetables to meat and cook until meat is done and veggies are tender
5) Combine all ingredients, toss and mix well
6) Heat slightly to bring to temp but not too much because sauce will thicken
7) Remove from heat and serve
