Ingredients

    1 Cup Hodgson Mill multi-grain oatmeal w/flaxseed and soy
    1 Cup unbleached white flour
    1 Tbsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1/2 Cup granulated sugar
    1 Cup carrots-grated
    1 Cup apples-chopped
    2 eggs
    1/2 Cup Milk, 2%
    1/4 Cup canola Oil
    1 tsp vanilla extract
    1/2 Cup pecans

Directions

Preheat Oven to 400F. Line 12 muffin cups with paper liners.
Blend together dry ingredients.
Add remaining ingredients and mix until blended.
Batter will be thick; spoon into muffin cups.
Bake 20-22 min. or until golden brown.
Enjoy!
