Ingredients

2 c cooked pinto beans, not canned
1 can tomato paste
1 c water give or take
2 stalks celery
1 onion, chopped
1/2 green pepper, chopped
2 c chopped mushrooms
1 can no-salt-added diced tomatoes
12 oz. ground turkey, 93% lean
seasonings:
1-2 tsp cumin
1-4 tsp chili powder (this adds a lot of sodium, my recipe calculator uses 1 tsp)
1 tbsp ground black pepper
Tips
can use no-salt-added canned mushrooms (at least 1 can, if not 2) in place of fresh mushrooms. I happened to have fresh today. I sliced 1 carton of them.
Directions
cook pinto beans as package directs. set aside. this is what takes the 3 hours of time.
brown turkey in a pot until cooked through. drain. add vegetables and cook for a few minutes, til begin to soften. add spices. add tomato paste and water. add diced tomatoes. cook for 30 min, add pinto beans, cook 30 more min. serve or refridgerate, can be frozen and eaten later as well.
