Ingredients

    1/2 onion finely chopped
    2 cloves garlic - minced
    Turkey, Ground turkey, 93% lean, 12 oz
    Ground beef, extra lean, 8 oz (remove)
    Tomato Paste, .5 can (6 oz) (remove)
    Canned Tomatoes, 1 can (remove)
    Pasta, cooked, 4 oz (remove)
    Eggplant, fresh, 1 eggplant, unpeeled (approx 1-1/4 lb (remove)
    Spinach, frozen, 1 package (10 oz) yields (remove)
    Milk, 1%, 1 cup (remove)
    Butter, salted, 1 tbsp (remove)
    *Flour, white, .125 cup (remove)
    Cheddar Cheese, 2 oz (remove)

Tips

If your family aren't afraid of egg plant like mine is you could skip the pasta and do this with 2 egg plants, or a mix of egg plant and zucinni squash. Just serve with fresh salad..


Directions

cook onion, add garlic, then ground beef and turkey until all are browned, add canned tomatoes, tomato paste, oregano and bay leaf, simmer on low while preparing everything else.
Slice and spray egg plants, grill 3-4 minutes until tender.
Defrost and drain spinach
make white sauce for top, melt butter and flour together in microwave aprox 1 min, mix in milk, cook another 1-2 minutes until sauce thickens.
Cook lasagne if needed (or use fresh or no cook verision)
Spray baking dish with olive oil, line with one layer of lasagna, 1/2 spinach, half meat, egg plant, then remaining spinach, meat and lasagna. Poor over milk sauce, then sprinkle over 2 oz grated sharp cheddar cheese.
Bake 350F aprox 35 minutes until hot.
