Ingredients

    4 eggs, 1 cup of Egg Beaters, 6 oz. crumbled feta, one box of frozen spinach (cookies, drained, and pressed with paper towel to remove moisture), 8 sun-dried tomatoes in oil minced finely, salt and pepper to taste

Directions

Use Pam or other non-stick spray in muffin/mini-loaf tin, and bake at 300 F for about 30 min. Time will vary depending on the size of the individual muffins/loaves.
