Ingredients

6 ounces ground turkey - 93% lean was used for calculations, but I ususally try to get the 97-99% if available.
1 large sweet potato, peeled and chopped
1 medium onion, chopped
1 package Simply Organic Gravy mix (feel free to make from scratch, this is my lazy way out!)
1 cup frozen peas
.5 cup chopped carrots
Tips
This is a great make ahead meal. I often will make it on the weekend, and keep in the freezer till the day I"m looking to bake it!
Directions
Sautee onions and ground beef in nonstick pan till onions are translucent and meat is almost cooked through. Put mixture into casserole dish. While sauteeing, Boil water and cook sweet potato until soft. Drain potato and mash (I don't use any butter for this as I prefer them dry, but you could certainly adjust the nutrition information if you wish to add it)
Prepare gravy according to package directions, and pour over meat mixture. Mix carrots and peas in with the meat mixture.
Cover the entire mixture with the mashed sweet potato and smooth over. Put the entire mixture into the oven at 350 for 20-30 minutes. Cool and serve with a garden salad.
Serving Size: Makes 3 "small meal" size portions
