Ingredients

1/4 cup cold pressed extra virgin olive oil
8 stalks celery, sliced (about 4 cups)
1/2 small onion, chopped
1 small fennel bulb (approx. 2 cups chopped)
2 garlic cloves, sliced
1/2 teaspoon chopped peeled fresh ginger
1 large bunch watercress, trimmed (about 4 cups)
2 Tbsp unpasteurized miso
4 cups water
Tips
Arugula can be substituted for watercress.
Directions
