Introduction

A delicious snack or quick dessert! A delicious snack or quick dessert!
Number of Servings: 1

Ingredients

    1/2 cup canned pure pumpkin
    1/4 cup liquid egg whites
    vanilla stevia, 1 dropper full (or 2 packets stevia, approx)
    1/2 tsp pumpkin pie spice (or to taste)

    1/2 tbsp sliced almonds for topping--optional, brings caloric total up to 84, fat to 2g, and protein 7g

Directions

Mix all ingredients (except for optional toppings of choice) in a microwave-safe mug or bowl and cook on high for 2 minutes. Dig in!

Serving Size: you get to eat the whole thing!

    just made this. Whole egg and 1 tbs of brown sugar Dont have stevia. Will use more pumpkin spice next time. Great - 10/5/17

    Nice quick dessert. Used almonds &chopped apple, & a sugar free maple syrup. Higher calories then listed, as my Libby pumpkin was 50 in 1/2 cup & I used 1/4 cup egg beaters. Calculation on 3 tabs egg beaters and 40 calorie pumpkin. Will go to 3 tabs egg next time. Great, enjoyed it. - 6/2/17

    Thanks for the great ideas for using pumpkin. I wanted something I can quickly make in the microwave. I used a whole egg and brown sugar to my taste because I didn't have stevia. The added calories were worth it. It was very good and I will definitely make it again. - 12/19/16
