Nice quick dessert. Used almonds &chopped apple, & a sugar free maple syrup. Higher calories then listed, as my Libby pumpkin was 50 in 1/2 cup & I used 1/4 cup egg beaters. Calculation on 3 tabs egg beaters and 40 calorie pumpkin. Will go to 3 tabs egg next time. Great, enjoyed it. Submitted by:

Thanks for the great ideas for using pumpkin. I wanted something I can quickly make in the microwave. I used a whole egg and brown sugar to my taste because I didn't have stevia. The added calories were worth it. It was very good and I will definitely make it again. Submitted by:
