    4 tbsp whipped butter
    4 tbsp flour
    2 cups 99% fat free chicken broth
    1 cup chopped onions
    1 cup chopped green onions
    2 cloves chopped garlic
    1 cup diced canned tomatoes
    2 pounds shrimp
    1 tsp salt
    1 tsp ground black pepper
    1 dash cayenne
    2 tbsp dried parsley or 1/4 cup fresh


make a dark roux with the butter and flour. Add onions & garlic. Saute until softened. Add tomatoes, broth and seasonings. Bring to boil. Sauce should thicken. Add shrimp. Cover and simmer about 20 minutes.

Serve over rice.

    We all loved this one! I lived in New Orleans, and this is the closest you can get to the real thing without having crawfish. - 8/23/10
