Introduction

Quick high protein muffin. Make in a glass measuring cup and dig right in. Serves one. Nice with yogurt on top. My sister-in-law passed this along after seeing Jorge Cruz share it on Dr. Oz. Ingredients

    3 TBSP ground flax seed
    2 tsp cinnamon
    1 large egg
    2 tsp baking powder
    1 tsp coconut oil
    (original recipe calls for 1 packet stevea, I did not have this & muffin was good, but add if you like it a little sweeter)

Directions

Mix ingredients in a 2 cup glass measuring cup until well blended. Cook in microwave on high for 50 seconds.
