Introduction

This serves as an excellent low calorie replacement for peanut butter. Partially defatted peanut flour can be hard to get. The cheapest way I have gotten it is through Trader Joe's. However, Trader Joe's no longer sells peanut flour due to low consumer demand. Ingredients

    1/4 cup partially defatted peanut flour
    1/2 cup fat free Greek yogurt (plain)
    A dash of salt (optional)
    Sweetener to taste (honey is delicious for this!)

Tips

Excellent as a replacement for conventional peanut butter in no-bake foods such as peanut butter and jelly sandwiches, peanut butter pies, ants-on-a-log, or fruit dip.


Directions

Stir all ingredients together until homogenous. The peanut butter blend is going to be light and fluffy even if stirred with a spoon, but a beater can add additional air if desired.

Refrigerate unused portions.

Serving Size: Makes 6 approx 2-tablespoon servings.

    Incredible!
    Yum! I have used PB2 for years, especially for milkshakes and baking, but this may be my favorite way to use it now. I put it on toast with spray butter, and it tasted like a complete indulgence.
