Ingredients

Spinach, frozen, 2 cup (remove)
Shallots, 1 chopped (remove)
Feta Cheese, 1 cup, crumbled (remove)
Egg, fresh, 6 large (remove)
Milk, 2%, .75 cup (remove)
pinch of salt and pepper
Tips
This is beautiful served with a side of stewed tomatoes and some pinepple and blueberries.
Directions
Spray a pie plate with vegetable oil, used olive
Thaw the spinach and squeeze dry
Mix the shallot and the feta with the spinach and put in the bottom of the oiled pie plate
Beat the eggs with the milk and salt and pepper and pour over the spinach and cheese.
Bake the quiche in a pre-heated oven at 350 for 45 minutes, It should be firm in the center when it is done.
Let is rest for 10 minutes before slicing.
Serving Size: 6 large or 8 smaller portions.
