Introduction

Gluten free low sugar rice muffins that taste great! Gluten free low sugar rice muffins that taste great!
Number of Servings: 8

Ingredients

    Preheat oven to 425 degrees

    1 C White rice flour
    1/2 tsp. salt or Morton™ lite salt
    2 tsp. baking powder
    2 T. sugar
    1 egg
    2 T. Canola oil
    1/2 C water
    1/8 C Craisins or 1/4 C blueberries

Tips

They bake up light and fluffy. You can add almonds or any fruit to the mixture. Substitute milk or juice for the water for a different taste.


Directions

Blend ingredients well and pour into lightly greased muffin pan.

Bake at 452 degrees for 17-22 minutes.

Remove from oven and allow to cool n pan for 5 minutes.
