Introduction

Ingredients

    1 lb white breast ground turkey
    .5 cup dry quinoa
    1.34 cup water
    2 cups diced onion
    1 cup diced celery
    1 cup shredded carrots
    1 egg
    12 Tbsp barbeque sauce
    1 teaspoon chopped garlic
    seasonings to taste

    bring water to boil and add quinoa & carrots. cook on medium for 12 minutes or until there is no more liquid in pan. Leave set for 12 more minutes.
    Spray pan & saute onion & celery until onions are translucent. Add garlic and cook 1 minute more. Add to bowl with turkey & egg. Mix with quinoa. Divide mixture between 12 muffin cups. Put 1 tablespoon of barbeque sauce on top. Cook for 30 minutes or until a thermometer inserted comes out to 160 degrees.

Directions

350 degrees for 40 minutes
