My variation on an old favorite... My variation on an old favorite...Number of Servings: 16
Ingredients

1 head of cabbage (red or green is fine), chopped
2 medium/large carrots, chopped
6 or more stalk celery, chopped
1 parsnip, chopped
2 medium onions, chopped
1 medium zucchini, chopped
2 medium sweet potatoes, peeled and chopped
1 can diced beets, undrained
1 Tablespoon fresh ginger root, chopped
1 Tablespoon olive oil
12 or more cups water
Salt and pepper to taste
Directions
Heat olive oil in large stock pot with fresh ground pepper and ginger root
Add chopped veggies and saute until they begin to soften, about 10 minutes
Add water to cover and simmer over low heat 45 minutes
Serve hot and enjoy!
