Excellent! A filling salad, extremely low in sodium, high in taste and important nutrients. Barley makes a nice change from traditional Bulgar. Made the same way. Excellent! Ingredients

    1 cup barley
    2 cups boiling water
    4 tbsp olive oil
    1/3 cup lemon juice
    1 cup chopped green onions
    1/2 cup chopped fresh parsley
    1/2 cup chopped cilantro
    1/4 cup chopped fresh mint
    3 tomatoes, chopped
    1 cucumber - peeled, seeded and chopped, fine
    ground black pepper to taste

Tips

A bit of salt really brings out the flavour, but is still very good on a sodium reduced diet


Directions

1. Combine Bulgar and boiling water in a large bowl. Cover, and set aside to soak for 1 hour.
2. Add oil, lemon juice, onions, parsley, mint, tomatoes, and cucumber; toss to combine. Season to taste with salt and black pepper. Cover, and refrigerate for at least 1 hour.


Serving Size: Makes 2, 1 cup servings
