Ingredients

    1 seedless cucumber, sliced into half moons
    3 roma tomatoes
    1 medium red onion, sliced (about 1 cup)
    1/4 cup crumbled goat or feta cheese
    3-4 TBSP EVOO
    3 TBSP white balsamic or white wine vinegar
    minced garlic, garlic powder, or Mrs. Dash Garlic & Herb seasoning
    salt and pepper to taste

Directions

Mix all ingredients together. Cover and let chill for at least one hour.
