Number of Servings: 12

Ingredients

    3 1/2 lb Eye of the round roast
    1 can 99% fat free chicken broth
    2 Large onions cut in wedges
    3 cloves of garlic
    1 bay leaf
    Salt and Pepper to taste

Tips

This is a great make ahead meal. I can transform it into sandwiches, wraps, BBQ, casserole soups or enchiladas. I love to cook once eat 3-4 times


Directions

Place onions wedges in bottom of crock. Pour broth over them. Cut slits in roast and insert cloves of garlic. Salt and pepper raost to taste. Place roast on top of onions. Cook pn low 6-8 hours. At this point you can slice and serve or shred for sammies.
