Introduction

Number of Servings: 6

Ingredients

    2 Tbs. Olive Oil
    2 Cloves of Garlic, chopped
    1 Medium Onion, chopped
    1 Bell Pepper, diced
    1 can of diced tomatoes
    1-2 tsp Cumin
    1-2 tsp Paprika
    1 cup Chicken Broth
    6 serving size pieces of talapia
    1 tsp Sesame Oil
    Juice from one Lemon
    Salt and Pepper to taste

Tips

My family loves this dish and it couldn't be easier. I always keep some talapia in my freezer.


Directions

Heal oil in skillet and saute garlic, onion and bell pepper until tender (about 7 minutes).
Stir in tomatoes, Cumin, Paprika, salt, pepper and chicken broth blending well.
Lay talapia on top of mixture in pan and then gently spoon mixture over the top of fish to cover.
Cover the pan with a lid and cook until fish is cook through and tender (about 5 minutes).
Gently stir in Sesame Oil and Lemon Juice.
Serve with Couscous or Bulgar.
