Ingredients

    Chickpeas 16 oz can
    Feta Cheese, 1.5 oz or about 1/4 cup
    10 Calamata Olives, Pitted and halved
    Red Ripe Tomatoes, 10 cherry
    Peppers, sweet, red, fresh, .5 cup, finely chopped
    English Cucumber (with peel), 0.5 cup finely chopped
    Red Onions, raw, .25 cup, finely chopped

    Dressing:
    Lemon Juice, 2 Tbsp
    Olive Oil, 1 tbsp
    Balsamic Vinegar, 1 tsp
    Oregano, ground, 1 tsp

Tips

Keeps several days in the fridge. Best to make a few hours ahead for flavors to mingle.


Directions

Put all non-liquid ingredients in a bowl. In small, separate bowl, blend together all liquids and oregano. Drizzle over and stir well.

Serving Size: Makes 4 servings of about 2 cups.
