Ingredients

Yellow Peppers (bell peppers), 3 pepper, large (3-3/4" long, 3" dia)
Onions, raw, 1 slice, medium (1/8" thick)
Garlic powder, 1 tbsp
Chicken Breast, no skin, 3 unit (yield from 1 lb ready-to-cook
Oregano, ground, 1 tbsp
Olive Oil, .75 tbsp
Mueller's Penne Rigate pasta, 454 grams
Del Monte Petite Cut Diced Tomatoes, 2.5 cup
Salt, 1 dash
Pepper, black, 1 dash
You can use any kind of peppers you like. I like a mix of red, yellow and orange. My mother always uses green but I like the lower acid content of the other peppers. And its more colorful.
Directions
Slice the chicken into relatively thin slices. I like between 1/4 and 1/2 slices. The thinner you cut them, the faster they will cook. Brown the chicken in a little oil in a deep saute pan. I opt to drain out about 3/4 of the liquid or "broth" and re-add it later. Add vegetables once chicken is cooked. Saute til onions are transparent. Add diced tomatoes and spices and simmer for about 10 minutes. At this point you can re-introduce the broth from the chicken. But if you like a thicker sauce, you can pass on that part. Salt and pepper to taste. And its ready. Add to pasta or rice. I like penne but any pasta will do.
