Introduction

Number of Servings: 4

Ingredients

    1 1/2 cups basmati rice
    1/4 cup brown rice
    olive oil
    3/4 cup chopped onion
    3/4 cup chopped vegies of your choice (I like peas, peppers and thin sliced carrots)
    1/4 cup sunflower seeds
    2 tbs dried mint flakes
    2 tbs dried parsley
    salt & Pepper to taste
    2 tbs lemon juice

Tips

This is a great way to use up leftover vegies of any type you have in your fridge.


Directions

Mix rices and cook ahead of time. Let cool. Saute onions and small bits of other vegies of your choice until soft.
Mix in precooked rice and stir until well mixed. Sprinkle in sunflower seeds, dried mint, dried parsley and stir. Sprinkle with lemon juice.
Stir in salt and pepper to taste.
Serve and enjoy
