Ingredients

    8 - 1/2 inch thick slices of baguette (cut at a slight angle)
    1/4 cup pesto
    3 medium tomatos (sliced)
    16 slices bocconcini cheese
    2 tbsp extra virgin olive oil
    Salt and fresh ground pepper to taste

Directions

Makes: 4 servings

Preheat the oven to 350 degrees. Line a baking sheet with parchment paper. Spread one side of each bread slice with pesto and set, pesto-side up, on the baking sheet. Top each slice of the baguette with 2 slices of tomato and 2 slices of cheese. Bake for 8 - 10 minutes, or until the cheese starts to melt and the bottom of the bread is lightly toasted. Divide the bruschetta among plates. Drizzle with the olive oil, season with salt and fresh ground pepper and serve.

    Incredible!
    My girlfiends loved this when I served it as an app. for my dinner party, gets my hubby's vote too! I used tomato pesto, so it was a good tomato lover's treat! I also substituted the bocconcini with mozarella (round stick), it was just excellent! - 7/6/08
