Introduction

Ingredients

1 cup almond butter
2 eggs
1/3 cup golden flax meal
1/2 cup almond or coconut milk (I use almond)
1/3 cup xylitol or equivalent sweetener (stevia, honey, dates, etc. I used stevia)
2 tsp vanilla
1/3 cup coconut flour or unsweetened shredded coconut
1/4 tsp baking powder
1/4 tsp salt
2 tsp cinnamon
Tips
I like to chop up some almonds or walnuts and sprinkle them over the top with some shredded coconut before I bake it. You could even make a paleo "strudel" topping, if you wanted to!
Directions
Preheat oven to 350*, prepare an 8x13" baking pan with coconut oil or butter.
With a hand blender or in a food processor, mix almond butter, eggs, flax, sweetener, vanilla, and milk together. Separately mix together the coconut flour, baking powder, salt, and cinnamon. Then blend or mix into wet mixture until well mixed and slightly "fluffy" looking.
Pour into prepared baking dish and bake for 18 minutes. Let cool for a few minutes, then slice and serve with coffee!
Serving Size: Makes 30, 1x2" bars.
