Introduction

Ingredients

    1/2 c. dry french lentils
    1 c. and 1/2 c. water or broth(recipe calculated with water)
    1 medium carrot, chopped
    1/2 bell pepper, diced
    3 cloves garlic, grated
    3 slices red onion, diced
    2 tsp. sazon
    1 tsp. chili powder
    1/2 tsp. cumin
    hot sauce
    salt
    pepper

Tips

Depending on your stove, the lentils could cook faster or slower, I find it always takes longer on electric versus gas. I do all the seasonings to taste, the measurements are just a guideline.


Directions

Rinse lentils under cold water. Bring water and lentils to a boil, reduce heat and simmer for 30 min, covered. In the meantime after about 20 min, saute the vegetables and spices (to taste) in a pan with nonstick spray until softened.

Add the mostly cooked lentils and 1/2 cup of additional water to the sauteed vegetables. Simmer for an additional 5-10 minutes, adding up to an additional 1/2 c. of water as needed, until the lentils are just past al dente.

Serve into taco shells of your choice, or put on top of salad for taco salad.

Serving Size: Makes enough filling for 6 tacos
