Ingredients

2 eggs
2 cups applesauce, unsweetened
5 cups old fashioned rolled oats
1 banana mashed
2 3/4 cup milk
1/4 cup flaxseed meal
6 packets of stevia
1 tbsp ground cinnamon
3 tsp baking powder
1 tsp vanilla extract
1 tsp salt
*optional toppings: raisins, walnuts, chocolate chips, cranberry. Cranberry is best so far.
Tips
cool and enjoy or freeze in gallon freezer bags. dried apples not so good as a topping. dried peaches mixed in not too bad.
Directions
mix eggs, vanilla, applesauce, banana, and stevia in a LARGE bowl. add in oats, salt, baking powder, flax, and cinnamon and mix well with wet ingredients. pour in milk and combine. pour mixture evenly into muffin tin (use paper cups or spray WELL). add toppings before baking. if using fresh or frozen fruit, drop directly into batter. bake 30 minutes until toothpick in center comes out clean.
