Introduction

unbelievably low fat, low cal, vegan pesto! unbelievably low fat, low cal, vegan pesto!
Number of Servings: 16

Ingredients

    3/4 cup or 6oz plain vegan soy yogurt (I used WholeSoy & Co Unsweetened)
    1 cup packed fresh basil
    1/2 tsp minced garlic (I use the jarred kind)
    optional: 1/4 tsp lemon juice, salt and pepper to taste

Directions

Combine yogurt, basil and garlic in food processor and puree until bright green and smooth/creamy. Add salt, pepper, and lemon to taste.

Serving Size: makes approx 1 cup, or 16 1-tbsp servings
