Introduction

Ingredients

    4 sea bass filets
    2 tomatoes
    100g mangetouts
    1 onion medium
    3 beetroots
    10 new potatoes
    1 inch ginger root
    2 cloves garlic
    10 g butter
    Sprinkle of olive oil
    Seasoning to taste

Directions

In a baking dish, layer orange and lime slices, fish filets, onions tomatoes ginger and garlic and scatter knobs of butter. Cover with foil and let it cook in oven at 190 C for about 25-30 mins or until cooked. Let the fish crisp up for the last few minutes by removing the foil.
In a separate dish roast the mangetouts and beetroot. Boil or bake the potatoes, break it up with a fork and season with salt, pepper and a little butter if desired.
Serve warm.
