I love pasta and so miss going out for pasta. I keep experimenting with my own pasta dishes and this one was a hit with both me and my husband. This recipe will make 3 lunch portions. Ingredients

    2 cups dry Whole Wheat Rotini
    3 Trader Joe's Garden Veg., Mushroom and Asiago Chicken Sausage links
    2 1/2 cups drained diced tomatoes
    1/2 tsp. of red pepper flakes
    Salt to taste
    1 tsp. garlic infused olive oil


Tips

I served this with roasted asparagus and it made a fantastic compliment to the dish!


Directions

Cook pasta 1 minutes less than the box instructions. While the pasta is cooking remove sausage from casings, brown and crumble in 1 tsp of garlic infused olive oil in a 10" skillet or saute pan. When pasta is done, drain and quickly add to the saute pain along with the drained diced tomatoes, red pepper flakes and salt to taste. Saute for just a couple of minutes on Med. heat and serve.

Serving Size: Makes 3 equal portions
