Ingredients

    1 large onion, chopped
    1 large carrot, diced
    2 tsp. grated ginger
    2 garlic cloves, minced
    1 T. olive oil
    1 large head cauliflower, cut into florets
    4 c. chicken or veggie stock
    2 c. shredded cheese (optional)*

Directions

Heat olive oil in dutch oven over medium heat. Add onion, carrots, ginger, and garlic. Cook till carrots are soft, about 7 minutes. Add 1 c. stock and cauliflower. Cover and let cook 5 minutes. Add remaining stock and cook till cauliflower is soft, about 10 minutes. Puree soup with immersion blender and stir in cheese if using. Serve immediately.

    Very Good
    This soup was easy to make and tasty. The whole family liked it. I would have liked more ginger taste I think, but I was using frozen cubes of ginger so maybe next time I will grate it fresh. - 3/6/08
